
Chopped Garden Salad with Honey Mustard Dressing
Salad Ingredients:
- 
4 cups mixed greens (romaine, butter lettuce, and/or baby spinach) 
- 
1 cup cherry tomatoes, halved 
- 
½ cucumber, thinly sliced 
- 
1 carrot, shaved or julienned 
- 
¼ red onion, thinly sliced 
- 
½ cup radishes, sliced 
- 
Optional: sliced avocado, hard-boiled egg, or shredded chicken for protein 
- 
Optional toppings: sunflower seeds, crumbled feta, or fresh herbs like dill or parsley 
Honey Mustard Dressing:
- 
2 tbsp Dijon mustard 
- 
2 tbsp honey 
- 
1 tbsp apple cider vinegar (or lemon juice) 
- 
3 tbsp olive oil 
- 
Salt & pepper to taste 
Instructions:
- 
Whisk together all the dressing ingredients in a small bowl or shake in a jar until emulsified. 
- 
Toss salad ingredients in a large bowl. Drizzle with dressing just before serving and gently toss again.
